Nourishing Kitchari Recipe

Ingredients:

  • 1 cup basmati rice

  • 1 cup moong dal (yellow split mung beans)

  • 4 cups water

  • 1-2 tbsp oil (you can use coconut oil or sesame oil if preferred)

  • 1/2 tsp minced fresh ginger

  • 1/4 tsp Golden Mellow Mix (or ground turmeric)

  • 1 tsp cumin seeds

  • 1 tsp salt (preferably pink Himalayan salt)

  • Black pepper to taste

Instructions:
1. In a medium bowl, combine the rice and moong dal. Cover the mixture with water and soak overnight.
2. In the morning, rinse the mixture under cold water using a fine-mesh strainer until the water runs clear.
3. Warm the oil on medium-low heat in a medium pot. Add the cumin seeds and let them cook for about a minute. Then, add the minced ginger and Golden Mellow Mix (or ground turmeric).
4. Incorporate the rice and dal mixture into the pot. Season with Himalayan salt and black pepper. After stirring, add the 4 cups of water.
5. Increase the heat to medium-high and bring the mixture to a boil. Then, reduce the heat to simmer for approximately 30 minutes, stirring occasionally, until it reaches a porridge-like consistency.
6. Test the kitchari to ensure a soft texture. If needed, continue cooking on low heat.
7. Once done, turn off the heat, adjust the seasoning, and stir. Allow it to cool slightly before serving. You may garnish it with cilantro or parsley for added freshness.
