When it comes to making a delicious and nutritious vegetable soup, following a few simple steps can make all the difference.

1. Steaming the Vegetables

Steaming veggies is an essential step in making a hearty soup. Different vegetables have varying steaming times and personal preferences play a role, so it’s important to consider both. For example, root veggies, legumes, and beans usually take longer to soften, so it’s best to steam them separately unless using canned or pre-steamed varieties. Additionally, rinsing quinoa beforehand not only aids in digestion but also removes any bitter taste.

2. Blending the Vegetables

After steaming the veggies, including onions, tomatoes, and peppers, allowing them to cool before blending is key. The blending process can be personalized based on the desired soup consistency. Some prefer a more liquidy soup like a warm, savoury smoothie, while others prefer a slightly thicker texture. The choice of blending method, whether in a blender or using an appliance like a Vitamix, depends on individual preference.

3. Flavouring the Soup

In a separate pot, a mixture of veggie stock or bouillon and water is prepared, with the quantities adjusted based on the amount of veggies used. After bringing the water to a boil, the steamed and blended veggies are added and kept over low heat. Once the mixture is blended smoothly, spices tailored to the vegetable combination are added. For example, turmeric complements pumpkin soup, while a mix of coriander and cardamom enhances the flavour of lentils. Additionally, zucchinis pair well with greens such as marjoram, parsley, or an all-purpose seasoning. Finally, serving the soup with a squeeze of lemon adds a delightful touch to the overall flavour.

Pumpkin Soup

Delight in the comforting flavours of pumpkin or butternut squash, potatoes, and cauliflowers, enhanced with coconut milk and a tantalizing blend of turmeric, cinnamon, and nutmeg.

Bean Soup
