Ingredients

  • 1 cup shredded coconut (plus extra for coating)

  • 2 tbsp Yoursuper Chocolate Lover Mix (or raw cacao)

  • 6-7 pitted dates

  • 1/3 cup chopped walnuts

Instructions

1. Combine all ingredients in a high-speed blender until they form a sticky, sweet mass.
2. Sprinkle a baking plate or pyrex with additional shredded coconut.
3. Form the mixture into small truffle-like balls and completely coat them with the extra shredded coconut.
4. Place the truffles on the prepared plate and refrigerate for approximately 30 minutes to allow them to solidify.
5. Enjoy these delectable treats! Store them at room temperature for up to 3 days or in the fridge for 5-6 days. If refrigerated, allow them to come to room temperature before enjoying, as coconut oil may cause them to harden in the cold.

Cherry-Coconut Popsicle Recipe for Picky Eaters

With this recipe, my little one has been happily consuming beets, spinach, cauliflower, and potatoes without even realizing it!

Ingredients:

  • 1 cup frozen cherries

  • 1 tsp vanilla extract

  • 3 tbsp maple syrup

  • 1 can coconut milk

  • Veggies of choice

Instructions:
1. In a blender, mix the frozen cherries and 1.5 tbsp maple syrup. Pour the mixture into popsicle molds, filling them halfway.
2. Clean the blender, then blend the coconut milk, vanilla extract, and the remaining maple syrup.
3. Fill up the popsicle molds with the coconut mixture and put them in the freezer.
4. Allow the popsicles to freeze for at least two hours before serving.
Prepare these cherry-coconut popsicles to sneak in some goodness for your little one, and maybe a few cute baby pictures for yourself! If you need popsicle molds, I highly recommend these for adults and these for little ones.

  • 2 cups fresh young Thai coconut meat

  • ½ cup (120 ml) coconut water

  • 1 tablespoon fresh lime juice

1. Blend the fresh young Thai coconut meat, coconut water, and lime juice in a blender until smooth.
2. Transfer the mixture to a glass jar or bowl and stir in the probiotic powder.

5. Store the yoghurt in the fridge for up to 1 week.
